One of the things that I do to stay on track is using leftovers to make a big salad for lunches. They are great way to use up the leftovers right away. Add some fresh greens and a little dressing to create something slightly different than the night before. During the week, lunches need to be made quickly so I can get back to the dealings of being a 4th grader and completing client projects.
On Monday night, as I was letting some quinoa and kale crisp up in a cast-iron skillet, I shared how I use Pinterest, IG and recipe groups (like the HHM one!) to find meal inspiration and then make it fit my family’s needs. Swapping the protein, the carb, the veggies… or even the seasoning mix to make it something we would like and also meets our dietary goals. In every meal, I am for a green veggie, a bright veggie, lean protein, complex carb, and a healthy fat.
