🎙️🔉José del Castillo is a proud Peruvian. At the age of 28, he discovered his vocation for Peruvian gastronomy. His mother, Isolina Vargas, taught him all about the flavours of Creole cuisine. In 2001, he took over "La Red", his mother's restaurant founded in 1981. In 2015, Isolina opened its doors, a charming historic mansion in bohemian Barranco where you can eat Peruvian comfort food from Creole cuisine.
It is a tribute to her mother whose culinary proposal aims to rescue flavours forgotten in old cookbooks and bring attention to the food of yesteryear.
José del Castillo is een trotse Peruaan. Op 28-jarige leeftijd ontdekte hij zijn roeping voor de Peruaanse gastronomie. Zijn moeder, Isolina Vargas, leerde hem alles over de smaken van de Creoolse keuken.
In 2001 nam hij "La Red" over, het restaurant dat zijn moeder in 1981 had opgericht. In 2015 opende Isolina haar deuren, een charmant historisch herenhuis in de boheemse Barranco waar je Peruaans comfort eten uit de Creoolse keuken kunt eten.
Isolina is een eerbetoon 'moeder' om smaken die vergeten zijn, te reden en de aandacht te vestigen op het eten van vroeger.
