Salt: Eating carbohydrates makes the kidneys hold on to salt rather than excrete it. The body then retains water to balance the blood's sodium concentration. It's not the salt that causes water retention, higher blood volume, and subsequent high blood pressure.

Water: A diet high in carbohydrates means you need to drink more water. When you take out carbohydrates from you diet, you only need to drink when you are thirsty.
